Chopped Broccoli, Pesto, and Mozzarella Sandwich Recipe

Makes 1 Serving

  • 1cup frozen broccoli florets
  • 2–3tablespoons pesto (you’ll be able to make your individual, or purchase the contemporary stuff they promote on the deli counter)
  • 1 6-inch piece of baguette (toasted if most well-liked)
  • 2ounces contemporary mozzarella, thinly sliced
  1. Microwave broccoli in line with package deal instructions.

  2. Place cooked broccoli in a colander or fine-mesh strainer to empty off all extra liquid.

  3. Coarsely chop broccoli.

  4. In a small bowl, combine broccoli with 2 Tbsp. pesto.

  5. Slice baguette open lengthwise, and unfold broccoli-pesto combination inside.

  6. Prime broccoli-pesto combination with mozzarella.

  7. Should you’d like extra pesto, unfold an extra Tbsp. over the half of the open baguette.

  8. Eat instantly.
