Makes 2 Servings
- 1pound hen thighs, skinless and boneless
- 1/4cup hummus
- 1cup jasmine rice, dry, raw
- 1teaspoon turmeric
- 1 giant tomato, diced
- 4cups child spinach
Preheat oven to 375ºF and line a baking sheet with parchment paper.
Place hen thighs on the baking sheet and coat with hummus. Bake for half-hour or till cooked via.
In the meantime, make the rice in keeping with the instructions on the bundle, including within the turmeric and chopped tomato whereas cooking.
Divide the hen, rice, and spinach onto plates or into meal prep containers.
